Peachy Keen: Arugula Salad with Grilled Peaches and Apricots

Summertime is fruit time for me.  I don’t eat too much fruit but I love the summer stone fruits like nectarines, cherries, apricots and peaches.  I usually put them as a topping for oatmeal or sliced for snacks but today decided to grill some for a truly delicious lunchtime salad.  It’s enough to make your heart sing!

This salad was put together by grilling some chunky slices of peaches and apricots and tossing them in a salad with arugula, chopped tomato, cooked quinoa, slivered almonds & pumpkin seeds. I sprinkled some fresh mint over the whole lot and drizzled some lemon juice and extra virgin olive oil.  Really perfect.  You could also use couscous or farro instead of quinoa and add some more protein from mozzarella, goats cheese or vegan cheese.

Peaches contain a shedload of different nutrients such as vitamin A, important to healthy vision and vitamin C, an antioxidant and tissue-builder.   They have a good amount of potassium helping to keep blood pressure stable and prevent kidney stones.  Peaches also have fiber, important for smooth & healthy digestive health as well as helping to regulate cholesterol levels.
