There is something very satisfying about making a really delicious & healthy meal (especially when cooking for a few people) that is also cost effective.
I choose to shop at Whole Foods for my groceries and whilst it’s more expensive than other supermarkets, I work at creating weekly meal plans that will stretch my grocery purchases and provide value for money in terms of nutrition and flavor! I also do my best to use what I have in the fridge and cupboards, some weeks with greater success than others ;).
On today’s post I’ve got a really great link to Mind Body Green, showing 3 wonderful plant-based meals that cost less than $1 per serving including homemade pizza and polenta. I’ll be making the seared polenta recipe this weekend for the family.
Polenta is a fantastic gluten free cooking ingredient similar to coarsely ground cornmeal. It has a wealth of health benefits that includes containing the mineral calcium. Calcium is not only important for the development and maintenance of strong bones and teeth, but also for the proper functioning of your heart, nerves, & muscles.
