It’s Izzie again! I’m super excited to show you one of my favorite after-school snacks!
Vietnamese & Thai food are my all-time favorite cuisines. I love the fresh flavors of chicken satay and pad-thai. But my must-have dish in Vietnamese restaurants is… summer rolls! Super light- and super healthy-, these little rolls are delicious and refreshing. It takes a little practice to learn to make them, but they are a really kid-friendly snack!
Izzie’s Summer Rolls
- Brown rice summer roll wrappers
- Fillings of your choice (Raw vegetables, tofu, shrimp, etc.)
- Sesame seeds
Chop your ingredients so that they are about 2-3 inches long. The summer roll wrapper will come stiff, so soak it in a bowl of water until it has softened, being careful not to rip it. Place the wrapper on a flat surface and arrange the fillings in the middle. Make sure you do not over-stuff the roll. Fold the sides of the wrapper over the fillings and roll it up. Top with sesame seeds and serve with chili sauce and soy sauce. Enjoy!
