I read this great post today that I wanted to share with you. As Summer is approaching and it’s already super hot here in Brooklyn, I’m cranking up the family’s salad situation for lunches and dinners. I try to mix up my salad choices, sometimes with a colourful rainbow side salad, other times converting a salad into a more substantial meal with tofu, eggs, goat cheese, fish or chicken but I’m always on the lookout for new ideas.
