Green is the new black: Baked Eggs & Greens

IMG_1161I have a massive bag of kale and a huge pile of spinach leaves in my fridge and I have to use them both up before they spoil.  So this morning I used these greens in a baked eggs breakfast that was an awesome way to kickstart the week :).

This is such a simple meal to make.  It takes about 15 mins start to finish and it’s both delicious and satisfying.  Just pan fry some greens and mushrooms in a little olive oil until wilted.  Crack in some eggs, season well and scatter some tomatoes over the top.  Bake in a preheated oven set to 350f for about 10 minutes so the eggs can cook.

We all now recognize that dark green leafy veggies are an important additions to your diet but did you know that they contain a decent amount of calcium?  People who are lactose intolerant can get beneficial sources of calcium nutrition as well as iron from veggies such as spinach, kale and greens (collard and mustard greens are examples).
