French Toast is possibly my kids’ favorite weekend breakfast. In England we call it Eggy Bread which is way less sophisticated sounding but no less delicious a dish!
I’ve been making French Toast recently with gluten-free bread. I soak the slices in a combo of beaten egg, almond milk and a little ground cinnamon before frying gently in the skillet until golden brown on each side. I usually top them with fresh berries, chopped nuts and a drizzle of honey or agave syrup. My son Charlie inhaled his plate today so I guess it must have been good.
Using gluten-free bread and almond milk is a simple alternative to regular bread and cow’s milk and actually makes this dish a little lighter to digest. I use unsweetened almond milk which has 50% more calcium per serving than cow’s milk and is also sugar and saturated fat free. Good stuff.
