Sunshine on a rainy day: Sauteed Kale, Mushroom and Mozzarella Omlette

Remember this 90s hit song? “Sunshine on a rainy day, makes my soul, makes my soul trip, trip,trip away” :)).

It’s raining yet again today (April showers I guess) so I’m brightening up inside with this gloriously clean eating golden omelette with sautéed kale, mushrooms and mozzarella.

Omlette

I beat 2 fresh eggs in a small bowl first, then tipped them into a pre heated lightly oiled skillet for about 3 mins until just set.  I then added about 1 oz of fresh mozzarella plus some sautéed kale and mushrooms.  I cooked it for another minute and then flipped it over and off the pan, garnishing with a little extra cheese, kale and mushrooms.  Absolutely delicious.

High protein nutritious meals such as omelettes are very satisfying and filling and a lunch like this will keep me going well into the late afternoon.  Great, quick and super tasty.
