Stacking Up: Banana Oatmeal Pancakes

This is a lovely little stack of banana oatmeal pancakes that I most definitely enjoyed for breakfast this morning.  It was such a quick meal to prepare and is a super nutrient-dense breakfast or brunch option for kids and adults alike!

The ingredients include banana, oats and some flax seeds which together provide a significant amount of protein and slow release carbs that will keep me energized, full and moving until lunchtime.  Oh and that kiwi flower, it’s my first attempt :).

Banana Oatmeal Pancakes

Serves 4-5

Ingredients
1 medium ripe banana
2 large eggs
⅓ cup oats

1 tbsp flax seeds & ¼ tsp cinnamon

Method

  1. Put the banana in a bowl and mash with a fork.
  2. Add the eggs and mix until well combined.
  3. Add the oats and cinnamon to the banana mix, and stir well.
  4. Heat a skillet over a medium heat with a dash of olive oil.
  5. Pour ¼ cup of the mixture into the skillet, cook on one side for about 1.5 minutes, then turn and cook on the other side for about 1 minute (or until golden brown on both sides).
  6. Serve (with or without maple or agave syrup) and enjoy.

  1. I just learned how to make a similar recipe from my sister recently. These are so much better than a standard pancake mix. It’s so great when you can count the ingredients on one hand! Great recipe!

  2. I am in L-O-V-E with your recipes and photos! Oats are, without a doubt, one of my favourite foods of all time. Though to be honest, this recipe would serve one person (i.e. me), instead of 4-5. Great post, and I look forward to more in the future. 🙂
