I may not be posting about shellfish again for a while now as it took me ages to figure out a title for today’s shrimp salad lunch ;). My brain is now hurting!
I tend to buy cooked frozen tail on shrimp in large packets that I can keep in the freezer and defrost in smaller quantities as and when I like. It worked really well in the grilled shrimp salad I made today which included black beans & grilled corn on a salad base of spinach, cucumber and tomato. I then made a yogurt dressing to go with it from some plain yogurt, lime juice & some salt and pepper. So good:)
Because my brain is still reeling from some actual thinking (!) , I’m going to repeat the nutrition elements of shrimp that I’ve noted before – that shrimp is loaded with protein, vitamin D, vitamin B3 and zinc. It’s an excellent, carbohydrate-free food for anyone determined to shed some pounds or manage their weight.
