I just made this roasted sesame tofu noodle bowl and when cleaning up managed to snap open the sesame seed bottle, sending hard to locate and annoying little seeds all over the kitchen!
This is a tasty quick cook meal that’s got some firm tofu slices, stir fried veggies (peppers, mushrooms and scallions) and some buckwheat Chinese noodles. I marinated the tofu for a few minutes with about a tbsp each of soy sauce, hot sauce, sesame oil and sesame seeds then baked it in the oven at 400f for 15 mins. Whilst it was cooking I stir fried the chopped veggies and added a cup of buckwheat noodles, finishing off with a drizzle of soy sauce. Easy peasy and super clean eating.
Tofu is a wonderful and versatile plant-based cooking ingredient. It contains protein, iron and the minerals calcium and manganese for good nutrition. I probably eat tofu twice a week and we all like it as a meatless alternative. Have a great day!
