Powering Up: Stuffed Peppers with Baked Eggs & Rice

I haven’t owned a car in about 6 years since we left England.  When we lived in China, we didn’t drive (it’s quite hard to get a driving licence there as a foreigner and you can’t drive with an international licence) and now in NYC I walk everywhere (with the dog) or take the subway if necessary.  I find this is a great way to keep fit and keep the heart beating :).

By the time evening comes I can get pretty physically tired so I try to eat meals that provide me with the energy I need to power on through the day.  Today’s lunch is an example of this with stuffed peppers with mixed rice and baked eggs.  I’ve got the carbs from the wholegrain brown rice which provide slow release energy to sustain me plus the eggs which give a hit of filling protein too.  The bell pepper provides Vitamin C plus fiber, iron and more protein.

IMG_0916 (1)This was really simple to make.  I halved a bell pepper, filled it with cooked brown rice and then cracked an egg into the pepper.  I then baked them in the oven for about 15 minutes at 400f.  I enjoyed these with some kale chips and a little time away from the phone and laptop.  Great stuff.
