What’s up Doc? Carrot Salad with Goat Cheese

Bugs Bunny is still my favorite cartoon character of all time.  He’s just so smug, with his Brooklyn accent and dodgy grifter mentality.  He’s always outwitting poor old Daffy Duck or Porky Pig whilst permanently chomping on a large carrot.

I love carrots and keep a big stash of them in the fridge to keep hunger pangs at bay.  I turned a couple of them into a shaved carrot salad with some goat cheese for my lunch today.

Carrots are jammed full of nutrition and we could all do with eating them regularly as part of a range of colorful veggies in our diet.  Carrots in particular contain Vitamin A which prevents premature wrinkling, acne, dry skin, pigmentation, blemishes and uneven skin tone. YES!!!!!

Clean Eating Carrot Salad with Goat Cheese

Serves 2

Ingredients

2 large carrots shaved into ribbons (I used a vegetable peeler to get the ribbons)

2 large radishes sliced

Small handful of romaine lettuce leaves

1/2 cup of goat cheese crumbled

1/2 cup sliced scallion

Fresh parsley chopped

1 tsp dried oregano

Salt and pepper

2 tbsp olive oil

1 tbsp balsamic vinegar

Method
  1. Use a large bowl to toss and coat the carrots, lettuce, radish and scallions completely then plate up your salad.  Scatter the goat cheese on top and sprinkle over the parsley.
  2. Combine the olive oil, vinegar, oregano, 1 teaspoon of kosher salt, ground pepper to taste. Pour over the salad and serve straight away.
