A quick post this morning to share the prettiest of breakfasts! Used up the leftover zucchini bread I made yesterday, added a pan-fried egg made with no oil and then some colorful fruit and nuts. The green juice was a blend of frozen mango, celery and spinach.
It’s substantial but light and was a delight to eat and look at. It’s pretty nutrient-dense too with fresh produce (fruit & veggies) making up about half the plate, some protein and some healthy fats. Have a happy day folks!!
