In countries with a hot and humid climate, watermelon is a chief source of hydration as it’s made up almost entirely of water. When I was a kid, we always had chilled chopped watermelon in the fridge in the Summer to take the edge of a hot afternoon. Sublime.
It’s very low in calories (so great as a refreshing snack) and contains fiber, protein, vitamins A,C, B1,5&6 and potassium which supports its hydrating benefits along with other electrolytes such as calcium and magnesium.
Watermelon can be enjoyed on its perfect own or chopped into fruit or vegetable salads. It’s particularly good mixed with feta cheese and mint for a sweet, salty and zesty combination. You can also make frozen watermelon popsicles which are a lovely treat for the young and old alike.
I added some to my daily morning fruit & veggie blended juice but because I was half asleep when I made it I forgot to take a photo of it! (very sorry). So here’s the recipe and a pretty photo of some watermelons slices to substitute.
Enjoy your Saturday wherever you may be!
