I saw this post on Food52’s site yesterday and thought it was such a great and useful idea for a week’s worth of meals. Basically you make 2 batches of a delicious and punchy corn salad that includes ingredients such as bell pepper, fresh corn kernels, sriracha chilli sauce, lime, parsley and cheese. You then use this salad 6 different ways to make some really yummy weeknight meals.
Fresh corn is really good this time of year. It’s natural sweetness works well with spicy flavors and it is also really nutritious. It contains nutrients such as lutein and zeaxanthin, two phytochemicals that promote healthy vision.
