Salad Days: Chopped Salad with Smoked Tofu and Pita Chips

Meatless Mondays are becoming more popular right now and that is good news!  Every week I read about creative meatless recipes on social media that shows a weekly reduction of meat and saturated fat consumption is an attractive and nutritious alternative.  I myself tend to do 4 days of vegetarian based meals (where I do my best to eat the rainbow of fruit & veggie colors) and 3 days where I include fish, poultry or a little red meat to those meals.

So everyday I have at least  1 salad meal and here in New York it’s great because you can find a a wide range of salad ingredients in the grocery stores as well finding every conceivable type of salad you want when eating out.  Most restaurants offer salad options as entrees on their menus which I really like.

Chopped Salad with Smoked Tofu and Pita ChipsThe obvious health benefits of eating vegetables are well documented.  Not only do they provide tons of vitamins and minerals but they also of course help with weight loss and maintenance due to their low-calorie levels.  In this post I have a recipe for a smoked tofu chopped salad which uses a base of crunchy vegetables and pita chips with a delicious marinated smoked tofu topping.  Really good.
