I’m not a morning person. I’m terribly jealous of those people who bounce out of bed the minute the alarm goes off and get going with their day, full of energy. It takes me much MUCH longer! So when I know I need a lot of sleep and a bit of extra pillow time, I try to make my life a little easier but prepping breakfast the night before and keeping it chilled in the fridge overnight.
Overnight oats are a perfect example of a make ahead breakfast. This style of making oats, traditionally called Bircher Muesli & originating from Switzerland is quick and easy to prepare and is satisfying and refreshing for a summer breakfast.
Oats are nutritional superstars. They are a food rich in sources of soluble fiber that have been linked to good heart health. Oatmeal contains both calcium and potassium,which according to studies are known to reduce blood pressure. I like this very much about oats:)).
I topped my overnight oats here with fresh mixed berries and piece of sesame crunch but you can be as creative as you wish. Nut butters, kiwi, peaches, dried fruits, honey or maple syrup are also great options.
Overnight Oats with Mixed Berries
1/3 cup of dry oats
1/3 cup of water
1/3 cup of greek or plain yogurt
1 tbsp chia seeds
1 tbsp flax seeds
1/2 tsp vanilla extract
Pinch of ground cinnamon
Small handful of mixed berries
Small piece of a sesame crunch bar
- Combine the oats, water, yogurt, seeds, vanilla and cinnamon in a glass jam/mason jar or bowl and mix well.
- Cover and chill overnight in the fridge. It will keep well in the fridge for a couple of days.
- When ready, top with the mixed berries and the sesame crunch.
