Kiwi Smoothie Bowl

With the official arrival of Summer this week, I’m feeling much more upbeat and happy!  I definitely benefit health wise from this time of the year.  I love everything about Summer, the long days, the bright blue skies (here in NYC anyway), the heat you feel rising from the ground upwards and the positivity that extended periods of natural daylight bring.

To celebrate all things Summery I made a colorful chilled kiwi smoothie bowl this morning for breakfast.  I know I’ve posted about smoothie bowls already this week but this one was so pretty I couldn’t resist! Kiwis are peculiar looking on the outside and look almost floral once peeled and sliced.  They hold a ton of nutrients that are amazing for our bodies. With stacks of vitamin C in every 1 cup serving – five times that of an orange, Kiwi fruit is a natural immune booster that staves off colds and flu. Its Vitamin K amount is also impressive, too – best known for its role in helping blood clot.  Pretty cool for this little green ball!

Kiwi Smoothie Bowl

Serves 1

Ingredients

2 cups spinach

1/2 cup frozen mango

1/2 frozen banana

1/2 almond or soy milk

1/2 kiwi fruit

2 tbsp blueberries

1 tbsp cashew nuts

1 tbsp chia seeds

1 tbsp flax seeds

 

Method

Blend the spinach, mango, banana and milk until smooth.  Pour into a bowl and top with the berries, kiwi, nuts and seeds.
